Buratta Heirloom Tomato Salad

 4 medium or large heirloom tomatoes 12 slices 14 basil leafs + 4 basil tops
 3 balls of buratta cheese cut in 8 pieces sprinkle with sea salt
To make Vinaigrette. In a small mixing bowl add all ingredients and whisk until blended.
 ½ cup of white balsamic vinaigrette
 ¼ cup extra virgin olive oil
 4 tablespoons of white balsamic vinegar
 1 teaspoon of chopped shallots
 ½ teaspoon of Dijon mustard
 1 teaspoon of honey
 Squeeze of lemon
 Pinch of salt
 Pinch of cracked pepper

To assemble salad place 4 medium size plates in freezer for 10 minutes to get really cold then start with a slice of tomato on each plate 2nd add a basil leaf tucked out a little 3rd place a piece or slice of buratta on top of tomato repeating process top with basil sprig then drizzle 2 to 3 tablespoons of vinaigrette over the top of tomato tower.
