This simple signature salad has been on the menu since day one, its combination of salt and sweet has been a crowd favorite. First you will start with fresh greens “spring mix” that you will get from your local market or farmer’s market.

Dressing
 ¼ balsamic vinegar
 ½ extra virgin olive oil
Pinch of salt
 2 teaspoons of brown sugar
 1 teaspoon Dijon mustard
 ½ tbsp garlic “ground”
 Squeeze of ½ lemon
 ½ teaspoon of shallots
 Pinch of black pepper
 Blend sugar and balsamic vinegar until sugar is dissolved and add all ingredi- ents until emulsified. Note dressing will last up to 2 weeks if refrigerated.
Toppings
 ½ cup of crumbled feta cheese
 ½ cup of golden raisins
 ½ cup toasted walnuts

Toss lettuces in large bowl until lightly coated then divide on to 4 plates or bowls spread walnut and raisins generously over salads and top with crumbled feta cheese.
